PHIL'S HOT ROLLS
1 cup warm water
1/2 stick butter melted
3 eggs
4-4 1/2 cups all purpose flour
2 pcks dry yeast
1/2 cup sugar
1 tsp. salt
Combine warm water and yeast. Stir in butter, sugar, eggs and salt.
Beat in flour one cup at a time. Cover and refrigerate 2 hours (up to 4 days).
Grease 13 x 9 baking pan. Divide dough into 24 equal size pieces.
Roll each into a small, smooth round ball. Place balls in even rows in baking pan.
Cover and let rise until doubled in size (about 1 hr.) Brush with butter.
Bake at 375 deg., 15-20 min.
JUNE RICE BISCUITS
iN A PLASTIC CONTAINER WITH LID MIX:
5 CUPS SEL-RISING FLOUR
1/3 CUP SUGAR
2 PKS. DRY YEAST. STIR TOGETHER
ADD 2 1/2 CUPS WARM BUTTERMILK (2 MIN IN MICROWAVE)
3/4 cup canola oil. Mix well.
COVER AND REFRIGERATE OVER NIGHT.
PREHEAT OVEN TO 425 DEG.
ROLL OUT TO 1/2 INCH THICK. CUT WITH SMALL BISCUIT CUTTER,
AS YOU PLACE IN PAN, TURN EACH BISCUIT OVER IN OIL.
BAKE 10-12 MINUTES. uSE ONLY DOUGH YOU NEED - SAME REST FOR
ANOTHER DAY.
June Rice Cobbler
Melt 1 stick butter in baking dish at 450 deg. in oven.
Mix: 1 cup sugar, 1cup self-rising flour, 1 cup buttermilk
Pour into baking dish
Add by spoonfuls all over batter your favorite fruit.
Bake 20-30 min.
