Mabel McKnight Mitchell
(November 20, 1916 - July 10, 2013)

St. George, Utah - Our Mimi is homeward bound. Beloved matriarch Mabel McKnight Mitchell passed away peacefully on July 10, 2013, at her home in St. George. Mabel was born to William Clark McKnight and Martha Minerva Leavitt Nov. 20, 1916, in Beaver Dam, Arizona, a place she was always proud to call home. She began her education in the one-room schoolhouse in Littlefield, Arizona and later returned to teach there. During her college years at Arizona State University she was not only the homecoming queen but also an outstanding debater and actress. Starring in a play, she fell in love with the male lead, her future husband Andrew Mitchell.
Mom spent 96 years loving to learn and teach. She taught Gospel Doctrine, Seminary, homemaking, pre-school, 3rd-5th grade and her favorite--high school English. She also loved to write. She wrote long letters to her family, opinions to the newspapers, patriotic presentations, hundreds of speeches and a biography. She was never afraid to speak her mind.
Mom cherished her family, her students, her neighbors in Beaver Dam, Boulder City, Heber Valley, and Sterling Court and they all cherished her. She leaves a legacy of reading fine literature, gardening, cooking for the neighbors, working hard, and putting her faith into practice. Mimi devoted her boundless energy and enthusiasm not only to those she loved but also to the Gospel of Jesus Christ. Andrew and Mabel were married for 72 years before his passing and he is tapping his feet in anticipation of her arrival. She leaves behind: four daughters, Judith Ann & Marvin Johnson, Mary Antoinette, Michele & Franklin Kolsky, and Andrea Jill & Marlo Krogue; granddaughter Kristin & Wes Fredrickson; grandsons Robert Highfill and Nelson Krogue; great grandson Andrew Abbott and great great granddaughters Autumn & Kamy Abbott and Evelyn Fredrickson. Her parents, 6 of her 9 siblings, and grandson Steven Boiles preceded her in death.
Two services will be held. A memorial service will be held on Thursday, July 18, at 10:00 a.m. (Mountain Time) at Sterling Court, 3243 N. 1680 E., St. George, UT. A second service will be held on Saturday, July 20 at the Littlefield Chapel, Highway 91, Littlefield, AZ. Viewing will be from 9:00 to 9:30 a.m. (Pacific Time) with the funeral service beginning at 10:00 A.M..
Arrangements are entrusted to the care of Metcalf Mortuary, 435-673-4221.
It is with a heavy heart that I tell all of you of the passing of Jill's mother, Mrs. Mitchell. She passed away Wednesday at noon. She touched so many of us throughout the years. However, she did live a long and loving life. She will certainly be missed.
The following is the message I received from Jill.
Randy,
Mimi passed away on Wednesday, July 10th at Noon. Her daughters were gathered round her
and we treasured every last day and moment we had with her. Her body did not give in easily.
She went 10 days without eating and yet that little heart of hers didn't skip a beat.
Please let everyone know that her funeral is in the Littlefield Chapel off I-15 between
Mesquite and St. George at 10:00 Pacific Time (your time). The viewing is 9:00 a.m.
at the same place. The obituary will be in the Sun on Sunday and again onWednesday. Thanks, Jill

Mrs. Mitchell's showed seemingly boundless energy helping me, and my classmates, appreciate literature, give speeches, debate, recite poetry, and even dance. Her encouragement seemed to be boundless. With many memories and much appreciation,
