Susan Rose Dempsey, nee Gehlin, age 57 of Seaside, CA, formally of Rolling Meadows, IL passed away July 19th, 2015. Sue was the beloved wife of Brian Dempsey, the daughter of the late Carl & Nancy Gehlin, daughter-in-law of Joseph and the late Roma Dempsey, loving sister of Eric A. (Barbara) Gehlin and Kathleen A. (Scott) Lager, sister-in-law of Joseph (Sue) Dempsey, Michael Dempsey, John (Debbie) Dempsey, Liz Dempsey & Maureen (Kiffin) Steurer and dear aunt of Sarah R., Adam S. & Nicholas E. Lager, Andi Gehlin, Luke, Becky, Dawn & Rachael Dempsey & Clemmens and Wes Steurer, mother to Cookie the Cockatoo, Mikey the Cockatiel and friend to everyone she met and countless others that got to experience her love. Sue was always quick to smile and her contagious joyful laugh will be remembered at every family gathering. She was a wonderful cook. Nothing warmed her heart more than to share a meal with those she loved; and her delicious cookies were a gift that everyone looked forward to receiving at Christmas.
