Mark, You know how to freeze it properly, but do you know how to cook it properly? haha.
Good to know that the fish markets will do the cooking for me. That is probably better than a lot of the restaurants I try on vacation.
I never heard of Dave Ramsey. I will have to look on the net and see who he is. I could use some sound financial advice these days.

Its hard to beat a good blackened Fish, but i love Tuna, seasoned and pan seared with a good stuffing! then throw it on a grill for a little while, Why would anyone need financial advice, just buy yourself into the poor house and let the goverment take care of you.

Yeah, we are trying to refi the house and when I asked my mortgage man what the new stimulus package might do, he said nothing for people like you and me that pay our bills. I think I will let the note default so I can save some money. haha!
Mark, I see that you are searious (pun intended) about your fish cooking. I like Mahi, Grouper, Halibut, and Sea Bass. The fattier fishes like Salmon and tuna offend my palette. I have not perfected preparing fish yet, but it is my goal for the summer.

Feel free to pass along any outstanding recipes you might have for fish and shrimp. Side included. I have a great slaw recipe from a friend of mine's Granny. When she passed away, I told him to run and get her cookbooks. haha! Sadly it was all in her head as it always was with the great old time cooks. I did get him to have her put her slaw recipe into layman terms for me.

my Egg is home made, i took two of the large terracotta flower pots used a masonery drill bit made some titanium rod handles but a thermostat on the top one and an electric heating element from an old smoker, the racks off the smoker and some clips etc and there you have it. my big orange egg!

we eat alot of triggerfish because its reasonably priced and really good, i brine them in salt water solution for an hour or so! pat dry, roll it in olive oil, sprinkle with seasonings of your choice (i like Tony's) pan sear it for a few seconds on each side place on a oven plate pour a little bit of beer over it and place in the oven and cook for about 15 minutes or so fish should be flakey. I cook more like that than any way. When i blacken it the trick is only cook it for a few seconds in the skillet then put them in the oven i always over cook them when i try to cook them in a skillet the whole time!

My grill is a "simple" Weber charcoal grill. It cooks as well as any other I've used. I like to keep my fish prep simple. Justin goes Food Network though. I mite try his recipe on my Cobia. I prefer cross body steaks in my fish.
I like the idea of bone-in without the head (yucky). These guys out here go crazy with the old bay seasoning. They put it on everything including french fries. It's all right,but I prefer just a little salt & pepper myself. My iron skillets are pro-seasoned by my momma and are basically non-stick. Someday when I grow up maybe she'll show me how she does it.

Yeah, where are all the ladies at lately? Vicki has all but disappeared and Stacy is sporadic at best.

Justin, When you said Tony's, did you mean Tony Chachere's? They are a big sponsor of the Razorbacks. You hear there ads during every game.

Do you guys get Cavendar's where you are? It is made up in Harrison, AR and it is awesome. I use it a lot. Especially on burgers. I don't know how it would do on fish. You would have to use it sparingly.

Hello all - it has been a VERY long time and I want to thank Mark for pointing me in the direction of this great site. I have been reading the older posts (not all 87 pages! Du Amn you guys can talk) and it does bring back some very very good memories.

This is like a scene out of Mr. Mom. I keep it pretty basic when I grill, but I love to Teriyaki Salmon and throw it on the grill. Blackened fish is one of my all time favorites, but I hate to smoke up the house. Can you blacken fish on the grill? I suppose you could with an iron cover.
