Nan Hahn's Original Frittata for a Group Posted Friday, June 22, 2012 07:15 AM INGREDIENTS: 16 eggs (or Equivalent of Egg Beaters) 1 medium onion, diced 1- 4oz can mushroom pieces 1 - 16oz can black olives - drained and well chopped 2 C - shredded sharp cheddar cheese 2 pkgs - Armour Brown & Serve sausage links - sliced into thin "pennies" INSTRUCTIONS: Whip eggs until well mixed in a very large bowl. Add all other ingredients and mix well. Pour into 9 x 13 (lasagna-sized) pan sprayed with Pam. Bake in 425* oven for approx. 1 hour or until firm and frittata begins to pull away from pan sides. No need for spices of any type (including salt and pepper) as all the flavor is achieved by the ingredients. Serve hot with a side of fresh berries and bread product of your choice. COOK'S NOTE: We belong to an organization which once held monthly covered-dish breakfasts. After the first time I made and brought this, we were not allowed to attend unless I promised to bring it, and it was always announced in advance that I was bringing my frittata. :-) I hope you enjoy it!! ~N~ |
