Ribeye, RIBeye, RIBEYE! best cut IMHO out there. I have a rub that I tweaked from Tom Perini (www.periniranch.com). He has a great Brisket rub as well if you like to broil or smoke a brisket.

Never cut the fat though it's what keeps the meat from drying out on the grill and Med Rare all the way.... HMMM making a fat guy teary eyed just thinking about it. I also like Salt/Pepper and then brush with melted butter through out the cooking only turn it once though.

Yes, I totally agree with Gary. Overhandling your meat is bad. (make your own jokes here) hahaha!

I like Ranch, although it should be outlawed because it's so bad for me. I also like Italian, Balsamic Vinaigrette and Blue Cheese. If you haven't tried it, I recommend you pick up a bottle or Paul Newman's Rasberry Vinaigrette. Lettuce, tomatoes, slivered almonds, pecans, or walnuts and that is all you need.

Does anybody remember Green Goddess dressing. It was a staple around our house when I was little and I have just began seeing it in stores again. A very unnatural green color. Like avocado dip.

First of all...David...if you seriously thought for a second that IIIIII was cooking on vaca...you must not know me as well as I thought! Yeah, they steam for you! It's great! Secondly "sporadic at best"....it's called work....unlike you, I have a non-typical state job! :-P

I am a huge fan of both Tony C's and Cavenders. I don't use Cavenders on steaks but on baked chicken with onions and celery.....muah! Very good!
If you like a steak marinade try Dale's seasoning too....it's pretty good, but still hard to beat is the Italian and Worcestershire marinade!

Mark, I am with you on the Caesar salad. For whatever reason, I remember Dorothy Lynch salad dressing-sweet, red and generic like as a staple of the past. You know, out here it is really hard to find good Chicken Fried Steak. With mashed potatoes and white gravy of course. Throw in some fried okra and corn to mix in the potatoes. Wow! I found three places here with decent recipes: The Crackerbarrel (of course), a place called The Mason Jar and this tiny cafe out East of town, but that is about it. It is much easier finding Quiche. LOL Mark!

Chuck, Have you ever had a Chili's chicken fried steak? They are one of my faves. One of those meals you can eat even when you feel bad. Good stuff. I usually sub grilled veggies for the corn on the cob.

Justin, GOOD CALL! Dry ribs are the bomb-diggity. I just had a rack on Saturday night at Corky's. I would've preferred The Rendezvous, but they have yet to put a franchise in The Rock.

Man, we gotta find something else to talk about. Jody, I keep some Lipton's in the cupboard all the time. Perfect seasoning. I do what you do and use my food processor to chop up some tiny potato bread crumbs and mix them in. Really bonds everything together. When I come out to AR next we're all gonna have to get together and cook out. Man what a feast that'd be. Though Chuck could leave the quiche in CO. I still can't believe my grilling ap on your iPhone bombed. I thought it was good. Oh well. David, love the flavor of grilled veggies. Specially on the grill. Just a little salt n pepa and some olive oil.

Hey Mark, the joke was a good one, I was working today so I was focused and didn't catch it until now. The iphone is a pain because you have to type one letter at a time. I am old school, so mostly it is good for reading what your email says or etc...We use it to schedule jobs when we are away from our home office to give customers immediate feedback in relation to our work calendar. But it is fun to bring up in here! Lots of attention! I feel good! (James Brown). But on a more serious note I have received word that my adopted Dad had kidney failure recently. He lives in Little Rock and I have never been super close with him. He is kinda in bad shape and I'm gonna come back home to visit him within the next month. Not sure how it is gonna materialize but I need to go see him. I haven't been back to Arkansas in about 4 years. It will be great to come home, but not sure what to expect with him. If you guys could lift us up in prayer that would be great. My full intentions are to see him and make sure that our relationship is intact. Heavy stuff at this stage of life, as I think I want to bring my boys and make sure that he has some time with them. I also would love to take my wife and boys to Sheridan and show them where I grew up and went to school. I guess we are getting to that age in life where we have to make sure are parents are ok and cared for. My mom is overdue for retirement and is very healthy, she comes out to see us usually once a year. She is a picture of the "spunky senior"! Works out and runs and drives the 60-70 yr. old male crowd wild. LOL! Well if anyone has any advice, I could sure use it. I always knew this was gonna happen, but I never planned on it happening. The prognosis on my dad is not good from what I have been told. I think after I visit him, I will visit alot of the places we have talked about in here. Didn't mean to kill the BBQ thread that was cool and gave me some ideas for this Summer, but I know that this is big and that you guys could handle it, and the realization that my home is back there, where we all grew up.

Don't let this serious talk slow down the awesome forum. Its the Southern talk that has helped me remember.

Chuck, sorry to hear about your dad. I can sorta feel what you're going through. My dad died when I was 19 and although we weren't what you'd call close it still affected me strongly. Mostly regret as to the wasted time not getting along. I was 19 though and you bounce back more readily. So if you want to call it advice, I'd leave nothing unsaid. Other than that you seem to have it in hand.
Even if it doesn't seem like it from your perspective. Getting your kids there and together will go a long way to help repair any cracks that might've been formed over the years. I will keep you in my thoughts. You have my #,if you can think of anything I can do, let me know.

Chuck, you got um. for you and your family! For years i thought i was the only person who had riff between them and there parents! I for one can say that the riff has made me a better father! because i do not want that to come between me and my kids, so i work harder at it! me and my dad are better but its not were it should be and never will be but we manage for short periods! I agree with Mark say what you feel, feel what you say! Chuck i have never seen your mom but when you describe her as driving all the 60-70 old men wild i laughed and had a visual thought of Ann Margret from grumpy old men!

Guys, I lost my Dad when I was 8 years old and although it is easier at that young age to deal with because you don't really understand, I really missed having a father growing up. I have had one step dad I didn't like and one currently that is the salt of the earth. (of course the crappy one was there during my fomative years) If you have a father around that you may not be on the best terms with, I would take the time to talk it out with em. On the same note, I talked to Doug Head last night and his father died last Thursday from cancer. Please keep his family in your prayers as well.

...and now for something completely different...I'm a lumberjack and I'm okay...
