Hey Everybody
Ok...let me straighten this out about cooking. I do know how to cook, I even know how to bake, and I probably own more cookbooks than Martha Stewart. At one point in my life I probably would have said I enjoy cooking. That all changed when I married a man who is VERY picky and had two kids who gag at almost anything I put in front of them. So over the last few years I have forgotten most of what I knew about cooking and lost any desire to want to do it. Now I HAVE TO start cooking to help Roddy lower his cholesterol and I feel lost...don't know where to start.
Oh, yeah, Ashley I did have a dinner party for Roddy's work a few years ago. I think I made a few appetizers but I did a little thing called CATERING...ha!!

I love your pictures!! I bet you had the best time. What did you go for? Just a trip or was it for your work?

I'm glad you had a great wedding. It sounds like it was lots of fun. I was in town the weekend of your wedding and wanted to come crash it, but I couldn't get Vince Vaughn or Owen Wilson to come with me. LOL. Wedding Crashers is my favorite movie!!! Post some pictures on your profile of your wedding and our honeymoon.

I want to go on a cool honeymoon, we only had 3 days until Roddy had to be at work, and um..well, the name of the place we went just left me...I can't believe this. I keep wanting to call it Green Mountain Lodge, but that is from Days of Our Lives. It is in Missouri, right outside of Branson. Does anybody know what that is called? ANYWAY, I want to go on a honeymoon again....a long, fun one!!

Beth~ Is it Cedar Lodge? The "COOKING" thing... Michael wants a meal @ noon and @ night. I feel like I'm Rachel Ray always in the kitchen. He doesn't realize it takes major time in the kitchen! ha ha I try to do something big @ noon that we can all eat leftovers @ night. Don't understand when I was growing up my mom told me to fix a sandwich (PB&J) and when I told Michael to fix a sandwich one day he just looked at me like I was crazy!!!! ha ha

Ashley~ Hey girl! How's it been?

Does anyone know where Matt Kinder is? He went to jr high with us, but moved off.

Just found my 1985 yearbook! We were all in the 8th grade!!! I'm laughing!!

Beth~ Todays lunch menu!!! haha is Baked chicken with onions, cream of chicken, cream of celery 1 stick butter, and season salt. Bake @ 350 for 1 hour. Dirty Rice ( 1 cup rice, 1 can of beef consomme, 1 can french onion soup and a stick of butter) and carrots.
This is an easy easy meal!!
I have a cookbook that our youth group put together I will mail you a copy of it. It has alot of easy receipes in it.

Beth-Glad you clarified the cooking thing, bc I was like I know Beth used to cook and I remember you baking fun things for your kids at Christmas and stuff. You even have a cookbook with your testiomony in it!! You just have me over and I will enjoy your cooking.

Hannah-I am great. I hung out with Matt Kinder about two weeks ago here in Conway. He looks exactly the same and he was fun. He asked about EVERYONE and it was cool to hang out with him! He has a fun wife and two kids.

Shevonya-How cool are the EGYPT PICTURES!! I would love to go there!! Tell us more about it....

Lori-would love to know more about Stacy Mcgough...find her out there.

Hey everyone! Good to see people talking again. I thought we all ran out of things to talk about. Not possible with women!

Shevonya- Ok, I absolutely want to go to Egypt now. Is it pretty safe? I want to hear more about it! My uncle wants to go so maybe I can talk him into organizing a trip over there. I know my mom would go.

Stephen- Congrats on the nuptials. See you in a couple of weeks when school is back in session!

Beth-the pictures are so funny! I am cracking up on Cathy and Teresa.

OOhh... that sounds so good Hannah. I have that dirty rice recipe. I love to cook that for people that are not big rice eaters...b/c after that, they leave lovin some rice!! I'm going to keep that chicken recipe. Although it doesn't sound too cholesterol free....I'll make it in a few months after we get his numbers down. That is what I was wanting...just some good recipe ideas. Lets share our favorite recipe or something.

I would love it if you came over and I cooked for you. That would be fun. We could sit and enjoy a good meal and talk. There would be no gagging or complaining. In fact, that is my favorite thing to do.....eat and talk!! So, come on over anytime. We will send Roddy and kids to McDonalds. My new favorite food is Thai food. I can't get enough. Every Sunday night we order it....it is so good!!
I'm going to post my favorite recipe later...

Lori-I am wrapping all the last minute stuff up for school. I love fall and all the school shopping and returning back to routine...it is a GREAT time of year and I LOVE hearing football on in the back ground at my house...such a great memory for me growing up.

Okay, Speaking of weddings...Do you guys remember going to all the Catholic Weddings growing up and walking around sipping champagne????? How did that happen? Or was I a total rebal? Catholic weddings were so fun!!

Lori- I saw where you lived in Benton. My two nieces live in Benton, Hannah and Harper Brown. I think they are older than your girls. Harper will be a senior this year and Hannah is going into 7th grade. I don't know if they have more than one school in Benton or not. Your girls may know them.

Beth- I bet if you get on Food Network you can find some great lower cholesterol recipes. I use that site all the time for new recipes. Love it!

Beth- I will have to think of a good recipe for you. I have been looking through them all because my uncle is coming to AR for the first time in 12 years (since I got married). Mom is trying to find something good to cook while he is here. Were is Collierville compared to where you live? Corbinn has a soccer tournament every year there, but I have not been able to go the last few years. Are you going to be around the weekend of Aug 23? If I end up coming, maybe we could find time for dinner. Would love to leave Jack home with the other two rug rats and just bring Corb for the weekend...

Stephen- Congrats on the vows! Sounds like you had one heck of a Catholic Wedding!

Hannah- Hope you have better luck with the puppy than I am having with Henry!

Lauren, I would love to hang out. Whenever you come up here just call and we will go to dinner.

School starts for Jack next week. I actually register Jack tomorrow. Ava doesn't start until after Labor Day.

I'm still thinking about what my favorite recipe is. I can't wait to see other people's recipes.
Teresa, I know you are rolling your eyes..but I wish you'd post a recipe. Your a great cook. I either want bbq "bugers" or meal for a crowd.

I hope you find Stacy McGough. I remember playing at her house so much, she lived right across the street from my Nana's house on Buerkle. I had smiley face pancakes at her house. I do not think that is her though in the picture.

Tricia - We live in Benton, but are acually in the Bryant school district. I will ask Katelyn (9th grade) if she knows either of the girls.

Beth - I recently bought a grilling basket from Pampered Chef. We love to cook shrimp and veggies (broccoli, squash, zuccini, potatoes) on the grill. That is quick and easy, and good for you. I understand about picky eater. Kristen (9 yr old) eats very little, and she is lactose intolerant...so that makes it even harder. No mac-n-cheese for her...or chocolate...I don't know how she survives...lol

hey yall,

hannah, Bailey LOVED Brookhill! When i walked in, i about started crying and i am not emotional person, but remembering being there growing up, and the Christian songs they were singing , some were the same. Right when Bailey came up to me, she said, mom, next year i want (not naming names even though yall would have no clue of this person), to come, it would change her heart. (It is one of her friends, that gossips a lot, you know, typical pre teen. But that showed me how huge of an impact it still is. Next year, i want us all to book the same week. I already told Jennifer, because Bailey and Loren hang out in the summers anyway, they are at Heber right now with Brent and Derek. Several Carlisle kids want to go, and they would have a blast with ya'lls kids.

Gray loved camp too, i thought this was cute though, he went to a Babtist church camp , he was probably the only Methodist there, and he called one night to tell me that he told his testimony and showed some of the younger kids how to get saved. (We have never really called it that in our Methodist church, but just word it differently i guess), anyway, thought that was precious.

Lori N.- so good to hear from you! I remember Stacy M. I don't know if you already know where she is, but i have good friends that i teach with from Humnoke that probably knew her in school and may still know her.

Hi everyone,

Glad you liked the pictures. I took so many of them that at some point I had to say - ENOUGH! It was so much to see and learn. I went on a tour with a group of folks...it was vacation, but more of an educational tour.

The flight from JFK to Cairo was 10hrs. We stayed at the Mena House in Cairo (used to be a palace back in the day), which was right next to the Pyramids. There were so many people and so much traffic! Everywhere we went there were vendors hawking us. Baksheesh became a common word in our vocabulary - it means money. Most of us are still trying to burn that word out of our memory!
The weather was pretty hot on most days...upper 90s and into 100s. We would get out early in the morning to visit temples, pyramids, museums. Noontime was considered the heat of the day, so most days we would be back by then. I regularly took 3-4 hr naps during the day and got back out after dinner. Our dinners were buffets in the hotels w/ a big selection. We had to watch what we ate though (limit milk, cheese and salads washed w/ tap water). As several found out, it was always important to have Imodium or acidopholus on hand. I did pretty good, but still always had the meds on hand in case. Bottled water was our best friend.
From Cairo we flew to Luxor and stayed in a beautiful hotel on the Nile. It was more laid back than Cairo - and hotter. It was interesting to be out at night and see entire families out. They tend to get out after the sun sets rather than in the heat of the day.
From Luxor, we traveled by bus to Aswan (Nubia). Our hotel was on an island, so we had to travel by boat everyday to go on our tours, to the market, etc. We also took a trip to a village by falucca boats, which are boats with sails, no motors. On the way back, my boat got blown into the bamboo reeds by the strong winds. We were actually "marooned" on the Nile. After about 30 or 40 minutes, we were rescued by a motor boat.
While in Aswan, we took a flight excursion to Abu Simbel (further south). That is where the magnificient colossal statues were. Truly breathtaking in every sense of the word.
We flew back to Cairo before returning to the states.

That is the extremely abbreviated version, but I think you get a picture. Send me a note if you have any more questions about it. :-)

Shevonya~ Great pictures! I agree with you on looking like that pymid. I think you were a Eypitain in your last life. haha... You look good girl. I'm glad Tricia and Darren were able to take care of your brothers. I know now where I can break down and get help. Haha.. They were lucky someone was home. Tricia is Ms. Worldwide & never home.

Beth~ I would tell Roddy to try the medicine first and then play some more football at the work picnic...or not to be so damn pickie on eating if he wants your help. Who don't eat onions. That's not right. haha.. Fast food restaurants has a light meun and he can take his pickie butt by there on his way home and get him something to eat if he is so pickie. I don't have any recipes except Bar-b-que "bugers" that doesn't have onions..haha.. If any of you are wondering I was at beth's house and wrote down a recipe that was suppose to be "bar-b-que burgers" and i wrote bugers" and she gave me that recipe when I got married.. so we joke about it still to this day.

Traci W. Are you still in your house? You can't be working that hard. Come out and talk to your classmates. If you have a job that makes you work that hard I say go get another job!

Shelley~ I need a door knocker for my new doors you still have those earrings in our "potrait" I hope you are feeling better.

Hannah~ I know you don't cook everyday for Micheal. I remember you bought a cookbook with Campbell's soup recipe's. I think that is what you use most of the time. haha.. Hey if I bring you the stuff to make dinner for my family will you do that for me. I think you did that for someone not to long ago. I will leave my kids over there while you cook my dinner. I'll be by tomorrow and leave my stuff there. I want it ready by 5:00. save your stamps on sending Beth that cookbook she willl take my advice.

Lauren~ I wasn't home when you called. I had to run out to the farm and I couldn't catch up with you. I still want to know where my epita? (however u spell it)

Class of 89' I might be stepping on some feelings here. Ya'll need to think long and hard on who you are going to vote for. I worry about this election and how much "change" we really want. Pray about the decision you make. I worry about Obama ( or however its spelling )
We need to know what our future leaders stand for! What there beliefs are and I don't see where he has made it "Clear" what he stands for. Just pray that whoever gets in there and is our future for our country HAS GOD ON HIS SIDE!!!! We talked about it in Sunday School and its has bothered me about all our future leaders!!! not just one but ALL!

Collierville is very close. You really never know when you leave Germantown and into Collierville. Its like leaving Little Rock and going into West Little Rock...you never really know which one your in. So come on down girl!!

I love to get pampered chef stuff. That is a great idea. I will buy that basket next time. I've been grilling alot of fish, but he won't eat any vegetables except potatoes, so I could at least grill those.

My most recent favorite recipe. I've been making this alot lately..because since I am the only one that eats it it will last awhile. It is soooo goood. You have to try it.
Cous Cous is a grain on the rice isle at the grocery store and its cooks really fast. That is why I love it so much.

Cous Cous Salad

Cook cous cous as directed on box.
Add 2 tablespoons of olive oil (you can add more if you like...I usually just pour it in until I think it looks right, but start with 2 tbs)
1 cup chopped macadamia nuts
lemon juice - I use 1/2 of a lemon, some may like more or less
Stir that well and let cool
Add cherry tomatoes quartered (I use the whole carton)
1 small bunch of green onion
red radishes chopped (again, chop as many as you like)
1/2 cup chopped fresh cilantro
I LOVE this stuff!!
I hope somebody will try it...let me know what you think if you do.
