Eggplant recipe
best I can remember:

1 eggplant sliced
bread crumbs (plain) use italian if you want
Tomato Sauce 15 0z.
(we had about six mushrooms in the fridge which I sliced thin and added to the layer of tomato sauce.
garlic powder
Pepper (add wherever you want)
Basil
olive oil
cheese (I used 1 pkg of Kraft 5 Cheese Italian mix)
1 pkg Mozzarella shredded cheese
Parmesan Cheese

I pretty much made this up as I went along building layers.

1: Eggplant brushed with olive oil and sprinkled with garlic pwdr.
2: layer of bread crumbs
3. layer of 5 cheese
4. layer of tomato sauce sprinkled with dried basil
(we had 6 mushrooms left which I sliced thin and added somewhere in here)
5. bread crumbs
6. layer of eggplant same as first layer
7. Mozzarella cheese
8. Bread crumbs again mixed with 2 tsps. of basil
9. sprinkle parmesan cheese on top

I ran out of tomato sauce or would have added another layer.
You can layer this different if you want.

Add salt/ pepper where you see fit and bake for 15-20 minutes or until bubbly.

top with fresh cilantro...

I thought the dish was too salty so consider there's already quite a bit of salt in the ingredients.
